CHARTING CULINARY FRONTIERS: INNOAQUA’S INNOVATIVE FOOD DEVELOPMENT INITIATIVES
One of the main objectives of the INNOAQUA project is to extract high-added value ingredients from algae biomass, both macroalgae and microalgae, to be used in the formulation of innovative seafood products. In this sense, ALGEMY INGREDIENTS SL is taking an active role in the demonstration of the microalgae biorefinery in a pre-commercial scale, developing a sustainable single cascade extraction process suitable to obtain several ingredients that meet the food formulators needs and that can valorise the whole microalgae biomass.
Microalgae are unicellular microorganisms that are rich in protein, lipids (including omega-3 fatty acids), vitamins, pigments, and other health-beneficial components. All these natural compounds can be extracted, isolated, and turned into nutrition ingredients useful for the formulation of innovative vegan food products. All these ingredients, together with those obtained from macroalgae and fish leftovers, will be extensively characterized, focusing on their techno-functional properties (such as their water holding capacity, emulsifying, jellifying and foaming properties…) in order to obtain products that meet the requirements of food formulators and packaging developers in terms of characteristics, safety, quality and regulatory compliance.

AQUA 2024: PIONEERING SUSTAINABLE AQUACULTURE SOLUTIONS
The INNOAQUA Project represented by project coordinator NORCE and project partner A4F took part in the AQUA 2024 event held from August 26-30 in Copenhagen, Denmark. This prestigious event was organized by our project partner, the European Aquaculture Society (EAS), in collaboration with the World Aquaculture Society, and highlighted the vital role of aquatic food in shaping the future of our global food systems.
Aquatic food, often referred to as “Blue Food,” is becoming increasingly prominent for its potential to offer healthy, tasty, and highly nutritious options for a growing global population. As the world focuses on transforming food systems to mitigate climate impacts and enhance food safety and security, aquaculture stands out as a resilient sector recognized for its environmental responsibility, reduced footprint, and high efficiency in protein transformation.
The European Commission, namely through the EU4ALGAE initiative clearly sets the stage for Algae. The INNOAQUA approach lays on fed aquaculture to focus, precisely, on algae production, and how this technology can contribute towards the goals of the European Green Deal.

INNOAQUA PROJECT PRESENTED AT I CONGRESO IBEROAMERICANO DE ALIMENTOS 4.0
The INNOAQUA project, a pioneering initiative focused on innovative aquaculture technologies, was represented by project partner Algemy at the I Congreso Iberoamericano de Alimentos 4.0 on August 21-22, 2024. This prestigious event, held in Argentina, is the first of its kind, bringing together leading experts, researchers, policymakers, and industry professionals from across the Ibero-American region to explore and discuss the latest advancements in food technology and digital transformation within the agri-food sector.
